Spicing up your life doesn’t have to be difficult or expensive, so I came up with a low cost recipe that can either be a large lunch for one, or a moderate, exotic meal for two.

Curry can be one of the easiest things to make, and the simplest way to turn an ordinary dish into something ethnically delicious. Here’s what you’ll need:

  • 1 can of chunky beef soup (Campbells can sometimes be cheaper than store brand)
  • Rice (Basmati preferred, but white rice works too)
  • Curry powder
  • Chili flakes, or chili powder
  • Salt
  • Water

Cooking time is roughly 30 minutes, because rice takes roughly that long to cook regardless of how much you’re making. For a single serving, I recommend a 1/2 cup of rice, for two servings use 1 cup of rice.

  1. Start cooking the rice in a small or medium pot, add 1&1/2 cups water. Bring up to a boil then reduce heat to medium and let boil covered. Add water as needed if necessary.
  2. Pour the can of chunky beef soup into a pot and bring it up to a simmer.
  3. Add curry powder, chili flakes/powder and salt to taste. This part is really up to you, depending on how spicy you want it, so take your time while the rice is cooking to slowly add the spices in to your liking.

Once the rice is cooked, dish the rice on a plate and then serve the EZ Curry over the rice, and voila! You’ve made yourself a very easy, and tasty curry dish! I also suggest that you enjoy this with a cup of chai tea.
